Hi Everyone
Kadi Chawal has been one of my always quick fixes for both lunch and dinner and me being in total love with chilles and spices is totally in the awe of kadi chawal and now my husband who cannot stand onions ( in pieces) in any dish is also a fan of the kadi chawal.

Ingredients:
Curd - 2 cups
Besan (Gram Flour)
Red Chilies dried – 3
Green Chilli - 1 ( cut into pieces)
Ginger ¼ inches(grated)
Onions – 1 small(thinly sliced)
Cumin Seeds – 1 tbs
Mustard Seeds – 1 tbs
Salt – to taste
Red chilli powder – 1 tbs
Turmeric - ½ tbs
Water – 2 cups

Process:
Mix curd and Besan (Gram Flour) and add water to make it in the form of thin consistency.Add turmeric and salt and keep it for 15 mins.
Heat oil in the pan.Add red chillies,cumin seeds,mustard seeds, garlic,ginger and cut green chillies till thet get fried.
Add onions and fry them until golden brown.
Add salt,red chilly powder and turmeric and fry for 2 more mins.
Add curd and boil till the consistency is thick.
Serve with Jeera Rice :)

Paneer Bhurji

Paneer kii bhurji is one of those dishes that reminds me of my mom's speciality - Malai Matar (looking frward to make that one of these days..).I tried this today as I had no vegetables left in the house and there was nothing to pack for lunch.So there was some thing that I was waiting to open my tiffin at 12 o'clock only.So hope you enjoy it tooo :)

Ingredients:

Paneer - 1 cup minced

Onions - 1/4 cup chopped

Tomatoes - 1/4 cup choppped

Green Chillies - 2 chopped

Ginger - 2 chopped

Cumin seeds - 1 tbsp

Salt

Red Chilly powder

Oil - 1 tbsp

Coriander

Process:

Heat oil in the pan and add cumin seeds.Add ginger, green chillies and onions.Cook till they turn golden brown.Add tomatoes.Add salt , red chillly powder .Mix well.Add paneer .Add Amchoor powder and coriander leaves.Pack it with Roti.

Kaddu/Pumpkin ki Sabji

Kaddu ki Sabji is another quick yet tasty creations learnt from my mom.
Ingredients :
Kaddu - 2 pounds peeled, cut and washed
GreenChillies - 2 chopped
Ginger - 1/4 " chopped
Cummin Seeeds - 1 tbsp
Asafetida (Hing)- pinch
Sugar -1 tbsp
Amchoor - 1/2 tbsp
Turmeric - 1/4 tbsp
Chilli powder - 1/4 tbsp
Oil - 2 tbsp
salt to taste

Process:
  • Heat oil in pan,add hing,turmeric powder,asfatedia,greenchillies,ginger and wait till they change colour.
  • Add kaddu/pumpkin and cover till they get cooked.
  • Add salt, sugar , red chilly powder,amchoor powder and coriander.Cook on low heat till 2 mins and continue heating till the water evaporates.

This isone of the most frequently used breakfast items - quick and easy.I use Gits/Priya mix sometimes also but making with sooji makes it really tasty and differnt in taste.Here is the recipie ,hope you will enjoi.

Ingredients
1 cup Rava / Sooji (Semolina)
25 gms fried Cashew Nuts (optional)
1 inch Ginger chopped
1 chopped Onion
3 Green Chillies slit sideways
1 Potato chopped
1 Capsicum chopped
1 Carrot chopped
1/4 cup Green Peas frozen or fresh
1 tsp Mustard Seeds
1 tsp Urad Daal
1 tsp Channa Daal
Salt to taste
1/2 tsp Turmeric Powder
Chili powder to taste (optional)
2 tblsp Oil
Few curry leaves
Finely chopped corianderleaves
1 tblsp Ghee
Lemon juice to taste

Process
Sift rava through a muslin / cheese cloth or very fine sieve.
Heat 1tbsp. pure ghee / unsalted butter and fry rava ,on a moderate heat, stiring constantly to light brown color and set aside.
Now heat 2 tbsp oil in a pan and add mustard seeds and allow them to splatter.
Add the daals : channa & urad & curry leaves to it and fry till they turn red.
Add onion, ginger and green chilies. Sauté for 2-3 minutes.
Add all the vegetables, turmeric & chili powder, and salt to taste.
Now add 3 cups of water and cover the pan and allow it simmer on low heat until the vegetables are done.
Add the fried rava to it stirring constantly till it becomes little thick.
Take off from the heat and lemon juice if desired.
Serve hot garnished with cashews and coriander.

Bhutte ka Kees

I did my college from Indore and food from Indore especially from Ankita and Nidhi's (my marwari freinds and my bestest freinds for life)made me a real fan of Indori Food.BeitBhutte ka Kees, Jirawan,Matar Patties and other food from Sarafa and Chappan Dukaan just reminds me of my beautiful young college days.So Bhutte ka kees is one of the delicacies which I never has anywhere so I love it...I hope you enjoy it too.

Ingredients:
Corn ears: 4
Green chillies: 2
Ginger: a half inch piece
Chickpea flour (besan): 2-3 teaspoons
Turmeric powder: ¼ teaspoon
Red chilly powder: ½ teaspoon
Coriander powder: ¼ teaspoon
Clove (laung): 3
Mustard seeds: ½ teaspoon
Oil: 2 teaspoons
Ghee: 1 teaspoon
Coriander (cilantro) leaves: a handful chopped fine
Dry coconut flakes (grated khopra): 1 tablespoon
Lemon: 1

Process
Grate Corn Cob leaving the centre hard part, Right Sweet Corn gives out loads of juice. (It looks yummy)
Once Ghee is heated Kadhai, Put Mustard Seeds,cumin seeds once done with spluttering put Ginger ,Green chilies and Curry leaves.
Put the grated corn and sauté it in the ghee for some time.
If it starts sticking to Kadhai, pour the milk along with turmeric ,coconut powder and salt.
Mix it properly. Let it cook with cover for about ten minutes, it looks fluffy when done. Garnish with coriander if required.

Gatte Ki Kadi

It took me a long time for me to materialise this recipie but I always remembered how my mom used to make it but I always used to dislike it but now when I made it by myself I really really liked it.Its yet another combination of curd and besan(gram flour).The only reason I never used to like gatte kikadhi was because of whole dhania but hey you know hate..you can just skip it.So enjoy this one.

Ingredients
200 gms Besan
1 tsp Dhaniya powder
2 tbsp Ghee
250 gms Curd
1 tsp Salt
2 tsp Oil
1 tsp Red chilly powder
1 pinch Haldi

Process

Mix besan while adding 1/2 tsp salt, 1/2 tsp red chilly powder, 1/2 tsp. dhaniya powder and ghee.
Make a stiff dough. Make 5-6 thin and long strips of the dough.
Put these strips in boiling water and cook for 5 minutes. Cut these gattas into small pieces.



Strain the curd through a strainer. Add 1/2 tsp. salt, 1/2 tsp red chilly powder, 1/2 tsp. dhaniya powder and haldi to the curd. Mix well.
Add the gatta pieces. Heat oil in a kadahi. Put the tadka of jeera and add the curd mixture.


Cook it for 5-7 minutes while stirring continuously till it comes to a boil.
Simmer the flame and cook for another 5-7 minutes.Turn off the gas. Finally put the tadka of red chilly powder. Serve shahi gatta curry with missi roti and pakori ki kadhi.


Makki ki Roti Sarson ka Saag

Hi Everyone
As a punjabi,this is one of the most asked and intersting recipies and yet so tasty.Try it its really yum.

Sarson ka Saag: Ingredients:
Sarson / mustard leaves: 1 bunch(You can also use Sarson ka saag Can from Desi store)
Palak : 1.5 bunch
Tomatoes: 2 nos (medium size)
Onions: 1 nos
Oil: -3 tsp
jeera: 1 tsp
Salt: According to taste
Turmeric / chilli powder: according to taste
Ghee: 1 dollop
ginger-garlic paste: 1 tsp
cheese: 1 cube
Juice of 1 lemon or according to taste

Method:

Pick the leaves from both the greens and wash them nicely in water.
Blanch the greens in boiling water , after 3-4 minutes of blanching the greens, remove them from hot water and immediately wash them with cold water (this helps in retaining the green colour).
Puree the onions and tomatoes and set aside.
Puree the cooked greens and set aside.
Heat oil in a kadai and add jeera to it. Once the jeera starts spluttering.. add the ginger-garlic paste.
Once the paste loses the raw smell, add the onion and tomato puree and cook for 4-5 minutes.
Now add the pureed greens.. Add salt, turmeric powder and chilli powder ti it and cook for 5-8 minutes.
Remove the cooked greens from the flame and add a dollop of ghee and then add lemon juice and set aside.
Add 1 cube of cheese and serve hot with makke di roti

Makke di roti: Ingredients:

Maize flour: 1 portion
wheat flour: 1/3rd potion
salt: 1 tsp
oil: 2 tsp


Process


Mix all the ingredients with water and knead it into a dough.
Cover the dough and Set aside the for 1 hour.
Make balls of the dough of size equivalent to 2-3 lemons put together.
Take a plastic cover or greased paper for making the rotis.
Grease the plastic cover with oil and keep the maize flour ball on it.
Slightly wet your hands and pat the balls flat to a desired size.
Heat a tava and gently place the makke di roti on the tava with the help of the plastic sheet / cover.
Cook the rotis on both sides and set aside on a plate..
serve hot with Sarson ka Saag…

ChowMein



Hi Everyone

Chinese Chinese Chinese!!! After being in China for a long time, I could never find Indian Style chinese - chowmein and manchurian.But slowly I developed the taste for bean curd sauce/toffu/steam chinese.But I still like Chinese made with Indian style more than the lo mein :).Hope you enjoy it too!

Ingredients
Packet Noodles
1 Onion Sliced
1 Capsicum Sliced
1 Cabbage Shredded
1 Carrot Sliced
1/2 cup Beans Chopped
2 tbsp Soya Sauce
1 tbsp Vinegar
1 tbsp Chili Sauce
Salt to taste
1/4 tsp Pepper Powder
2 tbsp Oil

Process
Boil Noodles in enough water.
Take care do not overcook.
Strain Noodles through cold water 2-3 times and drain water and set aside, add few drops of oil to the noodles to avoid sticking.
Heat oil in a wok and add sliced onions and stir fry for 20-30 seconds, add all other vegetables and stir fry for 2 minutes.
Add salt and pepper and mix well. Now add boiled noodles and mix well (take care that noodles don't break) .
Add vinegar, chili sauce and soya sauce and stir fry for a minute.
Serve the vegetable chowmein hot.
Note : According to taste vinegar, soya sauce and chili sauce can be increased or decreased.

Fruit Ice Creame

Since couple of months we are fasting on fridays and and we shop for fruits a lot but sometimes we bought and never finished it so I had this idea of making something fruity fruity since a long time and I did it which looked very good and tsted too.Enjoy
Ingredients

1/2 cup chopped apples.
1/2 cup cut grapes.
1/2 cup cut strawberries.
1/2 cup cut bananas.
1/2 cup chopped Mango.
1/2 cup chopped cashews.
1/2 cup chopped raisins.
1/2 cup chopped apples.
1/2 cup sugar syrup.
2 cups milk.

Process
Boil milk .Cool it.Mix everything and freeze it.Ready to serve.

Navratan Korma

Navratan literally means Nine Gems and this dish is named after the nine different fruits, nuts and vegetables used to prepare it. Traditionally Navratan Korma comes from a Mughlai origin giving it a very rich and slightly sweet taste.It was really an experiment for me to make Navaratn Korma but really worked.Try this simple recipe.It will work for you too.

Ingredients
3 cups - Boiled vegetables (potatoes, carrots, cauliflower, green peas, french beans, capsicum, )
175 gms - paneer( Fried pieces)
3 Cup Tomato puree
2 - Onion puree
1 1/2 tsp -Ginger paste
1 1/2 tsp - Garlic paste
1 tsp - Turmeric Powder
1 1/2 tsp - Red chilli powder
1 tsp - Coriander powder
2 tsp - Garam Masala Powder
2 tbsp - Cream
1 cup - Milk / water
1/4 cup - Dry fruits (cashew nuts, raisins)
Coriander leaves
6 tbsp - Vegetable oil
1 tbsp - Ghee
Salt To Taste

Process
Heat ghee in the frying pan and add dry fruits to it and fry for about a minute on medium heat. Keep separate.
Heat oil in a frying pan. Fry onions and ginger-garlic paste till golden brown.
Add salt, turmeric powder, red chilli powder, garam masala, coriander powder and fry for 2-3 minutes.
Add tomato puree and dry fruits. Stir well and cook the mixture for 3-5 minutes.
Add milk. Bring it to boil. Then bring to medium heat and cook until the gravy becomes thick.
Add paneer to the gravy and stir well.
Then add all the vegetables to the above gravy and cook for about 6 minutes.
Add cream and chopped coriander leaves on the navaratan korma to decorate .

Enchilladas

This Enchilladas recipie is one of my Mexican Adventures and the idea/recipie came out while watching Man VS Food.We ( me and my hubby) watches that show a lot and have cravings all the time to eat that kinda food.Me being Veggiterian have not much choice but yepp by husband does.So this is for him.

Ingredients

1 (15 ounce) can black beans, rinsed and drained
2 cloves garlic, minced
1 onion, chopped
1 (4 ounce) can diced green chile peppers
1 jalapeno pepper, seeded and minced
1 (8 ounce) package tempeh, crumbled
2 (6 inch) corn tortillas
1 (19 ounce) can enchilada sauce
1 (6 ounce) can sliced black olives
8 ounces shredded Cheddar cheese

Process
Preheat oven to 350 degrees (175 degrees C). Lightly oil a 9x13 inch baking dish.
In a medium bowl, combine the beans, garlic, onion, chile peppers, jalapeno pepper, and tempeh. Pour enchilada sauce into a shallow bowl.
Dip three tortillas in the enchilada sauce, and place them in the prepared baking dish. Be sure to cover the bottom of the dish as completely as possible. Place 1/2 of the bean mixture on top of the tortillas, and repeat. Drizzle the remaining sauce over the casserole, and sprinkle with olives and shredded cheese.
Cover, and bake for 30 minutes. Uncover, and continue baking for an additional 15 minutes, or until the casserole is bubbling and the cheese is melted.

Veggie Chilli Hot Dog

This veggeterian hot dog and chillie is the result of teh cravings that my temperarily turned vegeterian husbnad during the blizzard of 2009.We were stuck and home cause of the snow and had to make something intersting.So here it goes..But b not to mention the credit goes to Morning Star Vegeterian Varieties .I used sausage links and

Ingrediens
6 ounces Meal Starters™ Grillers® Recipe Crumbles™
1 can (14 oz) tomato puree
1 package chili seasoning
1/2 cup water
1 can (15 oz.) kidney or chili beans undrained

Process
Combine all ingredients in saucepan and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Serve hot.

Hot Dog
Ingredients
2 long Buns
2 Morning Star Vegeterian Sausage links

Process
Place the sausage links in between the bun and cover it with Chilli and sprinkle Cheese.You can also put mustard sauce.

Pizza



Hi Everyone
This was yet another snow mood recipies which was queit ready made and hence quiet handy.

Ingredients
1 Boboli® pizza crust
5 oz. container light garlic and herb cheese spread
1 lb. mild deli vegetable salad, well drained
1/4 cup sliced olives
2 cups shredded mozzarella cheese

Process
Preheat oven to 450 degrees. Place pizza crust on ungreased cookie sheet. Spread cheese spread over crust and top with drained vegetable salad. Sprinkle with olives and mozzarella cheese. Bake at 450 degrees for 12-14 minutes or until cheese is melted and lightly browned. 8 servings

Baked Pasta

Technically this is a'Tang Special' :).This recipie is inherited from my lovely freind and mentor Prabhs.This is an awesome recipie which can be used as a side and I have tried 'Baked Pasta' in several potlucks.Easy to cook and looks beautifull to serve.Here you go..Bon Apetite.

Ingerdients:
Pasta/Elbow Macroni/Funnel - 250gms - boiled and cooked.
Olives
Baby Corns
Green Peppers
Jalepenos
Corn
Onions - 2 tbsp chopped
Tomatoes
Pasta Sauce (Ragu)-1 bottle
Cheese


for white sauce:
milk -1/2 cup
butter-1tbsp
corn flour-1/2 tbsp
Cheese -grated American Cheese
salt -a pinch
Heat the pan .Add butter .After melting add corn flour, cheese and salt.Add milk and boil till thick consistency.

Process:
Boil the pasta and cook till they become soft.Add salt to taste.
In the baking dish,add pasta and white sauce.Mix well.
Add Pasta sauce(in my case Ragu) with pasta. Add olives,corn, baby corns,green papers ,onions , tomatoes and jalepenos.
Cover it with Cheese.
Heat Oven till 400 degrees C and keep in oven for 20 mins.
Ready to serve.:)
